Cobb Salad usually includes bacon, but bacon is usually too highly processed to fit our clean lifestyle. Therefore, this salad replaces the bacon with chicken. You will present the toppings in rows on the plate just as you would with traditional Cobb salad. This recipe will make two salads. I recommend the Sweet Tahini Dressing from the Chopped Broccoli salad or the Honey Dijon Dressing, also included in this chapter.
2 cups mixed greens
¼ avocado, cubed
1 hardboiled egg, peeled and sliced
¼ small red onion, chopped
½ medium tomato, chopped
2 cups chicken, cubed or shredded
1. Place the mixed greens in a large salad bowl.
3. Arrange the remaining ingredients in neat lines atop the greens.
4. Serve with dressing of your choice.
