If you like coconut, you will love these pancakes! The recipe uses both coconut flour (found in health food stores and some grocery stores) and coconut oil. You can use coconut milk instead of almond milk if you want even more coconut flavor. I serve these pancakes with real maple syrup or honey. You can create coconut flavored honey by infusing a few chunks of fresh coconut in the honey for a few days beforehand.
The recipe makes enough for two servings.
½ cup coconut flour
¼ cup coconut oil, melted
¼ cup honey
¼ cup almond milk
½ teaspoon baking soda
Extra coconut oil to grease the skillet
1. In a large bowl combine the flour, melted coconut oil, eggs, honey, and almond milk. Whisk together.
2.Add the baking soda and whisk it in so that there are no lumps.
3.Put a little coconut oil in a skillet over medium high heat and spoon out the batter to make the pancakes. Cook on both sides, remove to a plate, and serve while warm.
