This recipe contains a great deal of fiber thanks to the three grains involved. It will definitely fill you up, too. Be careful to use only unsweetened dried fruit; I prefer raisins, cranberries, or apricots. This makes a batch of dry mix that will keep fresh in an air-tight container for up to a month. Scoop out a half cup of the mix per serving.
1 cup quinoa
2 cups old-fashioned rolled oats
1 cup rolled wheat and/or barley flakes
1 cup dried fruit
1 teaspoon ground cinnamon
½ cup chia seeds
¾ teaspoon sal
Directions: (Dry Mix)
In a large bowl, mix the dry quinoa, oats, and wheat flakes with the dried fruit, cinnamon, chia seeds, and salt.
Directions: (To prepare one serving of oatmeal)
1.Measure out a half cup of the dry mix and put it in a saucepan with 1¼ cups of water. Bring to a boil
2. Reduce the heat, cover, and simmer, stirring occasionally for 12 to 15 minutes or until the mixture has thickened.
3.Let stand, covered, for five minutes. Stir in some honey or agave syrup to sweeten if desired and throw in some nuts.
